AARADI(Rice flour pudding):

Desserts have a very unique place in the Indian food culture.Preparation of delectable desserts mark the onset of festivals and it is an inseparable part of our culinary heritage.The popularity of Indian Desserts , ranging from Gulab Jamuns to payasam shows how much we Indians love those yummy recipes.

For the nostalgic food lovers , I have come up with a simple 3 ingredient desserts which is cooked  for pooja by my ammamma(grand mother) . This recipe is especially made during Vinayaka Chaviti as its known as one of our Ganapathi’s favorite. 

So Lets get started:

Tips For the Perfect Aaradi:

  1. Use a finely made rice flour.
  2. Make a paste of rice flour before adding it to the recipe, as the flour might form lumps.
  3. The color of the dish depends on what kind of sweetener we add. If we use sugar its lighter and darker when used bellam (jaggery).  
  4. Do not add the rice flour paste all at a time. Add little by little checking the consistency needed.
  5. Once the rice flour is added to milk , keep stirring it as the mixture might stick to the bottom.

Pala talikalu are also made with same ingredients but have small rice balls added to them. Procedure is a little different from today’s recipe. I will update pala talikalu recipe on the blog soon. Stay tuned.

Ingredients:

  1. Milk: 2 cups
  2. Rice flour: 5-6 table spoons
  3. Jaggery: 1 cup
  4. Coconut pieces: Half cup
  5. Cardamom powder (elaichi): Half teaspoon
  6. Ghee: for roasting the coconut pieces.

The above ingredients are available in any Indian Grocery stores. Rice flour can also be prepared at home. I will shortly post the process of making rice flour.

Prep:

  1. Fry the coconut pieces in ghee and keep aside.
  2. In a bowl add the rice flour and add little milk to it to make a lump free paste and keep it aside.
  3. In a pan add milk and let it boil on a lower flame.
  4. Once the milk starts to boil, add the rice flour paste little by little and keep stirring it in order to avoid the mixture getting stick to the bottom of the vessel. 
  5. Let that cook for 2 mins and then mixture starts thickening, at that point of time add the jaggery and mix well.
  6. Once the jaggery melts add in the roasted coconut pieces and cardamom powder. And switch off the flame. Let it rest for a minute and transfer it to a bowl.
  7. Serve hot.

Health benefits of Rice flour:

  1. High in beneficial fiber.
  2. Gluten free.
  3. Help maintain healthy liver.

Tip:

When any vegetable curry is watery,add a little rice flour and water mixture to it. It helps thicken the curry. 

Add equal amount of besan(senagapindi) and rice flour, make them a paste using milk and apply it on face. It helps preventing the blemishes.
